I did this sweater today (and still managed to do housework and play with my one year old). It is double stranded and done in Simply Soft, so it is economical too. I altered the pattern alittle to work the sleeves in the round. I plan to knit this again and do alittle more altering.

I love quick and economical for baby gifts... they grow out of them so fast. Do you have a pattern? I'll quick out your ravelry profile to see as I have many pregnant friends!
